In a large bowl combine all the beef ingredients. Form the ground beef mixture into 4 oz oval shaped patties.
Next in a large pan on medium/high heat, add 1-2 Tbsp of olive oil. Sear the patties on both sides then remove from the pan and set aside.
Discard the fat from the pan then add the butter. Once the butter is melted add the onion and slightly caramelize. Next add the mushrooms and season with salt and pepper. Continue to cook until all the water is out of the mushrooms then add the garlic, fresh thyme, and flour. Stir all that together then add the beef stock, worcestershire, dijon, and ketchup. Stir and bring to a gentle simmer.
Next add the beef back to the pan, cover with a lid and simmer for about 15 minutes or until the beef reads 160 degrees Fahrenheit internally. Once done, adjust the seasoning to your taste and add some fresh chopped parsley.
Serve with mashed potatoes and broccolini. Garnish with crispy fried shallots and parsley.
Enjoy!
