Fried Zucchini with Garlic Aioli
30 mins prepServes 4
A delicious recipe for crispy fried zucchini, coated in a seasoned corn flake breading, served with a zesty homemade garlic aioli. It's explicitly noted as gluten-free friendly.
1. Peel some of the zucchini and cut into 1/4 inch thick strips.
2. In a large bowl, add corn flake bread crumbs, garlic powder, onion powder, red pepper flake, parmesan cheese, and salt and pepper to taste. Mix well.
3. In a separate large bowl, add flour, salt, and pepper. Mix well.
4. In another separate large bowl, crack eggs and add a little water. Beat eggs until combined.
5. Bread your zucchini by first dredging in flour (making sure to knock off any excess flour), then dipping in the egg, and finally into the seasoned breadcrumbs, ensuring the zucchini is completely covered.
6. In a cast iron skillet, heat vegetable oil to 350 degrees Fahrenheit (for safety, do NOT fill the oil up past halfway). Fry zucchini for 3-4 minutes per side or until golden brown. Place on a wire rack and immediately season with a little salt.
7. For the Garlic Aioli: In a bowl, combine mayonnaise, minced garlic, olive oil, lemon juice, salt, and pepper. Adjust ingredients to your taste and whisk until combined.
8. Serve the fried zucchini with garlic aioli on the side, and garnish with grated parmesan and chopped parsley on top. Enjoy!
