A hearty breakfast sandwich featuring a toasted sourdough English muffin, turkey bacon, a turkey sausage patty with melted American cheese, a fried egg, homemade guacamole, and a spicy sriracha mayo.
1. In a large pan on medium heat, add 1-2 Tbsp of butter and toast the English muffin until golden brown. Make sure to keep the muffin moving for an even toast. Set aside.
2. In a large pan on medium heat, add 1 Tbsp of olive oil and cook turkey bacon until crisp. Set aside.
3. In a large pan on medium heat, add 1 Tbsp of olive oil and the sausage. Smash the sausage into a patty and sear for 1-2 minutes a side. Flip and cook until 165 degrees internally. Add a slice of American cheese on top and melt. Set aside.
4. In a medium bowl, combine mashed avocado, tomato, onion, 1 tsp lime juice, olive oil, salt, and pepper to taste. Mix and set aside.
5. In a small bowl, combine mayonnaise, sriracha, 1/2 tsp lime juice, 1 minced garlic clove, salt, and pepper to taste. Mix and set aside.
6. In a medium pan on medium-low heat, add 2-3 Tbsp of butter. Crack an egg into the pan and baste the egg with butter until the egg is cooked but the yolk is still soft.
7. To build the sandwich: Start with some spicy mayo on the bottom muffin, followed by the guacamole, sausage patty, cheese, bacon, and fried egg. Add some spicy mayo to the top muffin, crown the sandwich, and enjoy!
